Cooking the Perfect Turkey and Still Having Time to Enjoy the Party

Are you worried about cooking the perfect Turkey? Here are a few tips from our executive chef that you can do ahead of time so that you can relax on the day of your party.
How is it that some people are able to make entertaining seem so effortless? One minute they're enjoying a glass of wine with their guests and the next they're magically serving an array of stunning dishes that are beautifully presented and piping hot. Follow these tips and you too can make entertaining look easy.
Day before party
1. Place turkey in a large roasting pan and season to taste.
2. Prepare your stuffing according to your favorite recipe and stuff it inside the turkey. Make enough so that the stuffing overflows the turkey.
3. Wrap tight with aluminum foil and place in a 350 degree oven. This keeps all the juices in.
4. Cook covered until inside temperature is 160 degrees, approximately 12 minutes per pound. (Try using a thermometer-it can really make a difference).
5. Uncover the turkey and cook for another 15 minutes to brown the turkey.
6. Remove Turkey and let cool.
7. Pull stuffing out of turkey and place in another pan.
8. Carefully cut the Turkey breasts off the bone, try and keep them in one piece. Cut the thighs and legs off as well. Place these in another pan along with any gravy and cover tightly, depending on the size of the turkey one or two 9x13 pans will do. (This will create more room in the oven so you can heat more things up.)
Day of Party
1. Place the turkey and the tray of stuffing in the oven to finish cooking about an hour before you will be serving it. (NOTE: If you have a warming drawer or a Vikron Buffet Cart you can finish cooking the turkey 4 or 5 hours before your guests arrive.) Cook the turkey until it has an inside temperature of 180 degrees.
2. Take out of oven, slice the breasts and thigh, platter and serve or place in your warming drawer or Buffet Cart until you are ready to serve.
We have been doing this for a long time and found that doing most of the carving beforehand makes things easier at mealtime and also creates more oven space.
If you are using a warming device you can place the cooked turkey on a serving platter and loosely cover with aluminum foil so that the meat retains its moisture without drying out. Do not cover tightly as this can continue to cook the meat. Place the platter in the warmer and forget about it until you are ready to serve your meal.
